To prepare MAKI sushi, you will definitely need a bamboo scroll mat to create a perfectly textured roll. Scrolling without this pad is unnecessarily complicated and floody. It serves as a pad under the seaweed so that it does not tear during packaging and it is easier to create a neat roller.
